The philosophy behind this way of eating makes a lot of sense: instead of wasting time counting up a bunch of calories and keeping track of every little thing we eat (because who the heck has the time for that?), we fix our relationship with food and only eat things that are filling and chock-full of nutrients.

People who adhere to the Paleolithic diet only eat things that a caveman might have eaten back in the day. Can you hunt it or gather it in the wilderness? No? Then you don’t eat it on the Paleo diet.

Why Paleo Instead of Regular Chocolate Bark?

INGREDIENTS:

  • 100 g coconut oil
  • 200 g cacoa butter
  • 1 packet of SUTRA Black
  • 3 T cacao powder
  • 1/4 tsp salt to taste
  • 1 tsp vanilla

DIRECTIONS:

Line a dish with baking parchment.
Melt everything together on low heat in a pan.
Allow the mixture to cool to room temperature, then spread evenly over the parchment.
When the bark has almost set, add any toppings you like. There are some suggestions below!
Allow the bark to totally set—sticking it in the fridge will help speed the process along.

Add five minutes to that.

If you start now, that is when your chocolate bark could be setting gloriously before you.

INGREDIENTS:

  • 1 ¾ cups Paleo chocolate chips (look for dairy free and dark chocolate made with a high percentage of cacao)**
  • 1 packet of SUTRA Black
  • ½ tsp coconut oil
  • ½ cup unsalted, roasted almonds

Spread out some parchment on a baking dish.

  • 1 cup coconut butter
  • 1/2 cup coconut oil
  • 1 tbsp raw cacao powder

DIRECTIONS

Line your baking dish with parchment paper.

  • 1/2 cup cacao powder
  • 1/2 cup coconut oil melted

  • 1/3 cup pistachios
  • 1/3 cup cranberries dried
  • Pinch of sea salt

DIRECTIONS

Line a baking dish with parchment paper.
In a bowl, mix together the cacao powder, coconut oil, and SUTRA.
Spread the mixture onto the parchment paper.
Sprinkle on your pistachios, cranberries, and sea salt.
Freeze for 15-30 minutes, break it apart, and eat up!

Recipe 5: Pumpkin Spice Chai Bark

INGREDIENTS

  • 1 cup melted cocoa butter
  • 1/4 cup cashew butter

  • 1/2 cup chopped pecans
  • 1 tsp pumpkin pie spice

DIRECTIONS

Line a baking sheet with parchment paper.
Mix together your cocoa butter, cashew butter, pumpkin pie spice, and SUTRA Gold.

Sprinkle on the chopped pecans.
Refrigerate or freeze until the bark is set, cut or break into pieces, and go crazy!

Recipe 6: Salted Caramel White Chocolate Bark

Thought your days of rich desserts were over once you stepped into the Paleo world? This recipe begs to differ! It’s just as rich, but way healthier than you’d expect. Made with dates rather than added sweeteners, you can enjoy this one with zero guilt.
Those sugar cravings never stood a chance!

INGREDIENTS

  • 6 pitted dates (soaked I boiling water for 10 minutes)
  • 1/2 cup extra virgin coconut oil
  • 2 Tbsp Cashew butter
  • 1 packet SUTRA Gold
  • 1 tsp 100% vanilla extract
  • Pinch of Himalayan salt

DIRECTIONS

Line a baking dish with baking paper.
Blend the dates with the salt with either a blender or a strong food processor until creamy. Set the mixture aside.
Blend the coconut oil, cashew butter, SUTRA Gold, and vanilla extract until the mixture is super smooth (about 3 minutes). You can use the same blender or food processor, don’t worry about cleaning it out!
Spread out your concoctions in layers—the date mixture on the bottom, and the coconut/cashew butter/SUTRA mixture on top of that.
Freeze for a minimum of 2 hours, until set.
Break your bark into shards and eat up!
